Creamy Baked Mac and Cheese

  1. Step 3: Create the Sauce Base: Very gradually, whisk in the 2 cups milk and 2 cups half-and-half. Bring to a boil over medium heat, whisking constantly. Remove from the heat.
  2. Step 4: Add Flavor and Cheese: Whisk in the 1 teaspoon Worcestershire sauce. Gradually add all of the Velveeta cheese and half (1 1/2 cups) of the cheddar cheese. Stir until the cheese is completely melted and smooth. Stir in the 1 teaspoon salt, 1/2 teaspoon dry mustard, 1/4 teaspoon pepper, and pinch of nutmeg.
  3. Step 5: Combine and Bake: Add the cooked, drained pasta to the sauce and stir to coat. Transfer the mixture to the prepared baking dish. Sprinkle the remaining 1 1/2 cups of grated cheddar on top. Bake for 15 minutes, or until the cheese is melted on top and the sauce is bubbly.
  4. Step 6: Broil for Finish (Optional): For a crispier, browner top, pop the dish under the broiler for 2-5 minutes, watching carefully to prevent burning.
