Peel the garlic cloves. Lightly crush or slice them if you prefer a stronger garlic flavor, or leave them whole for a milder infusion.
Sterilize a clean glass jar with a tight-fitting lid by washing it thoroughly and allowing it to dry completely.
Place the garlic cloves into the jar. Add rosemary, thyme, or red pepper flakes if desired.
Pour the raw honey over the garlic, making sure every clove is completely covered.
Add the apple cider vinegar and gently stir with a clean spoon until the ingredients begin to combine.
Seal the jar tightly and store it in a cool, dark place.
Allow the mixture to infuse for at least one to two weeks, gently shaking the jar once a day during the first several days.
When the desired flavor is reached, either leave the garlic cloves in the jar or strain the liquid into another sterilized container.
