Preheat the oven and prepare the baking tin.
Preheat the oven to 175°C. Grease a 23×33 cm baking tin with butter or non-stick cooking spray. This helps with cleanup and makes serving easier.
Mix the pineapple filling.
In a large bowl, combine:
Drained pineapple
Sugar
Flour
Grated cheddar cheese
Stir until the flour is incorporated and everything is evenly coated.
Spread the mixture in the prepared baking pan and smooth the surface.Baked Goods
Add the topping.
Crush the cookies into coarse crumbs. Pour the crumbs into a bowl and mix with melted butter until evenly moistened. Sprinkle the topping evenly over the pineapple mixture.
Bake until golden brown.
Bake uncovered for 25 to 35 minutes, until the edges are bubbling and the top is golden brown with toasted spots.
For a more golden top, bake for an additional 3 to 5 minutes. Keep a close eye on them near the end. The cookies can go from golden to too dark quickly.
Cool briefly, then serve.
Let the baked goods cool for 10 to 15 minutes before serving. This gives the filling a chance to set and helps the topping stay crisp. Serve warm. You can spoon it like a pudding, or cut it into squares once it has cooled a little more.
