Ingredients:**
-
1 box chocolate cake mix (15.25 oz / 432 g), plus ingredients called for on the package (typically eggs, water, and vegetable oil)
-
* 1 ½ cups shredded sweetened coconut (4.5 oz / 128 g)
-
* 1 cup granulated sugar (7 oz / 200 g)
-
* ½ cup milk (whole or 2%)
-
* ½ cup unsalted butter (1 stick), melted
-
* 1 teaspoon vanilla extract
-
* Pinch of salt
-
* 1 (16 oz) can chocolate frosting
**Instructions:**
-
**Prepare the cake:** Preheat your oven according to the chocolate cake mix package directions. Grease and flour two 8-inch round cake pans or one 9×13 inch baking pan. Prepare the chocolate cake mix according to package instructions and pour evenly into the prepared pans. Bake as directed, or until a wooden skewer inserted into the center comes out clean. Let the cakes cool in the pans for 10-15 minutes, then invert them onto a wire rack to cool completely.
-
2. **Make the coconut filling:** In a medium bowl, combine the shredded sweetened coconut, granulated sugar, milk, melted butter, vanilla extract, and a pinch of salt. Mix well until everything is thoroughly combined and the coconut is evenly coated.
-
3. **Assemble the cake:**
-
* If using round cake layers: Once cooled, place one cake layer on a serving platter. Spread the entire coconut filling evenly over the top of this first cake layer. Carefully place the second cake layer on top of the coconut filling.
